1 kg all purpose flour
6 each whole egg
16 each egg yolk
Mix the egg and egg yolk together.
Form a well with the flour and salt; add the eggs in the middle.
Incorporate the flour to the eggs slowly.
Knead the dough little by little for about 10 minutes.
Wrap the dough with cling film and leave to rest in the fridge for 1 hour.
Take out of the fridge 20 minute before rolling.
