Basic Tomato Sauce

Ingredients:

1kg   Ripe tomatoes
3 cloves  Garlic chopped
4tsp   Virgin olive oil

Method:

Blanch and peel the tomatoes then chop into small pieces
Heat the olive oil in a tick-bottomed sauce pan add the garlic and tomatoes and cook until the mix is reduced and you are left with a thick sauce. Season with salt and pepper and a pinch sugar.
